Bonjour and welcome to Croissants by Sheila Anne! We are a French-American bakery located in Jenks, Oklahoma specializing in authentic French pastries and American pies and cakes. We take great pride in sourcing the best products available including shipping our butter all the way from Normandy, France, home of the finest butter in the world. We believe this attention to detail and commitment to excellence help make our pastries the finest in the region.

My name is Sheila Dills and I began the dream of opening a Patisserie in 2004 during my first visit to France. I loved the quality and artistic style of pastry I experienced in a country so well known for its pastries and food.

Since my first visit, I have spent time at Le Cordon Bleu Paris in 2012 completing General Cuisine Certification Classes as well as Ferrandi Paris in 2022 where I completed the Fundamentals of French Pastry. I also graduated from the Pastry Academy in Las Vegas in 2023 under the direction of World Reknown Pastry Chefs Amaury Guichon and Michel Ernots from France and Belgium.

In 2022, I began stocking my American pies at a local antique store and they were an overwhelming success. Making high quality pies with the flakiest crust you have ever tasted was a skill handed down from my mother who was an excellent baker. The success from my pies gave me the confidence to pursue my ultimate dream of opening a Patisserie in my local community.

Careful consideration has been given to every detail of our business. We sourced Oak Wood Roasted Coffee made by Italian immigrants, partnered with a top chocolatier in the United States and created a fun and classic Patisserie for you to enjoy; just like the best in Paris.
